Mint chocolate chip cupcakes!

I thought it would be fun to post some cupcake recipes, just because.

  • For the cupcakes:
  • 1 1/2 cups self-rising flour
  • 4 tablespoons Dutch-process cocoa powder
  • 1 teaspoon baking powder
  • 1 cup superfine sugar
  • 1 cup (2 sticks) sweet butter, softened
  • 4 eggs
  • 1 teaspoon mint extract
  • 1/2 cup (3 1/2 ounces) semisweet chocolate chips
  • .................................................................................
  • For the frosting:
  • 1/3 cup (2/3 stick) sweet butter, softened
  • 2 cups confectioners' sugar, sifted
  • 1 teaspoon mint extract
  • green food coloring
  • 1/2 cup (3 1/2 ounces) semisweet chocolate chips
  • -------------------------------------------
  • My cousins really like mint chocolate chip ice cream so i thought why not have it in cupcake form? And so i went online and i found this recipe. I would say it's pretty good.

  1. Have you tried the recipe? If not, how do you know it's any good. If you are going to use pictures they ought to be your own. Show what you have made in addition to some from web sources. Good reference to original sources, but would like more original commentary. Describe flavors, origin of recipe, best kind of cupholder, something that makes it more engaging. Thus far: B.
